Ingredients (Serves 2–3) - 2 ½ cups whole milk or water (or a mix of both) - 2 oz Mexican chocolate (stone-ground artisanal chocolate) - 2 tbsp masa harina (toasted) - 2–3 tbsp grated piloncillo (or to taste) - 1 small cinnamon stick (preferably Mexican canela) - 1/4 tsp vanilla extract (optional) - Pinch of salt ⸻ ? Instructions 1. Toast the masa harina in a dry skillet over medium heat until it becomes fragrant and slightly golden, about 3–4 minutes. Set aside. 2. In a medium saucepan, combine milk, cinnamon stick, and piloncillo. Simmer over medium-low heat until the piloncillo fully dissolves and the cinnamon infuses (about 5–7 minutes). 3. Lower the heat and whisk in the toasted masa harina, stirring constantly to avoid lumps. Let it simmer gently for 5–8 minutes, stirring often, until it thickens slightly like a light atole. 4. Add in the Mexican chocolate and stir until fully melted and incorporated. Add a pinch of salt and vanilla if using. 5. Remove from heat, place the molinillo between your palms, and roll it back and forth briskly to froth the drink. (Or use a whisk or hand frother.) 6. Serve immediately in ceramic mugs. Optional: dust with cinnamon or serve with pan dulce. Can be served chilled. ⸻ ?
