This summer I’ve been interning at Herb pharm, immersing myself fully into the world of organic and regenerative farming as well as medicinal herbs. My days are full, with eight hours of harvesting, hoeing, planting, or weeding, followed by evening classes on herbalism and the body systems. It’s definitely demanding, both physically and mentally, but also incredibly rewarding. Some beautiful moments from my last month in Oregon. I’ve been interning at @herbpharm, learning about herbal medicine and organic farming. This experience has been both challenging and deeply rewarding, and it’s taught me so much. I feel more connected to the earth than I have in a long time. I am truly in awe of her generosity in providing us with medicine and nourishment. I’ll be sharing more about what I’m learning and creating while I’m here, but for now, I just want to share some of this beauty with you all and express my gratitude for this sacred home????

Slippery Elm Date Balls A Gut-Nourishing Snack These digestive-aid date balls are rich in healthy fats, omega 3s, fiber, phytoestrogens, and mucilage, making them a satisfying, digestion-supporting snack. Slippery elm powder, made from the bark of the slippery elm tree, has a naturally sweet, sappy scent that enhances the treat-like quality of these balls. Its mucilaginous texture coats and soothes the mucous membranes of the digestive tract, helping food move gently and naturally. Unlike laxatives, slippery elm is non-stimulant and is especially helpful for conditions like GERD and acid reflux due to its soothing, protective properties and its ability to coat the esophagus. This herb infused pesto is a delicious way to bring a little kitchen medicine into your meals. I use it to fry eggs, toss with spaghetti squash, or coat chicken and salmon before roasting. This pesto is packed with nutrient rich herbs such as basil, a common culinary herb abundant in minerals like iron, magnesium, and manganese, as well as vitamins A, C, and K. It has anti-inflammatory and antiseptic properties, making it both flavorful and medicinal. Lemon balm adds a bright, citrusy note and brings its own array of healing qualities. It’s antispasmodic, helping to ease muscle tension and stomach cramps, and it has a calming effect on the nervous system, making it useful for soothing both the body and mind. Traditionally, lemon balm has been used to lift the spirit, acting as a natural mood enhancer. It’s also antiviral and supports the immune system. Nettles are another powerhouse herb in this blend. They’re mineral-rich, containing iron, potassium, chlorophyll, magnesium, phosphorus, zinc, and manganese, as well as vitamins A, C, and K. I’ve talked a lot about nettles on my page and love using them as much as possible when they’re in season.

Ingredients: -Equal parts nettle infusion, butterfly pea flower infusion, and coconut water -Juice of one lemon -A pinch of Celtic sea salt Preparation: Start by making your infusions: -For the nettle infusion, add 1 tablespoon of dried nettle to a large mason jar. Fill the jar with boiling water, cover, and let it steep for at least 4 hours or overnight for maximum mineral extraction. -For the butterfly pea infusion, use the same method, but steep for only 15 minutes, as it’s a delicate flower and doesn’t require long steeping. (I also have a video tutorial if you’d like a visual guide!) Why It Works: -Nettle is incredibly nutrient-dense, rich in magnesium, potassium, chlorophyll, and vitamins A, C, and K. It’s especially helpful for replenishing depleted adrenal glands and supporting overall vitality. -Butterfly pea is packed with antioxidants and is naturally anti-inflammatory.
